Many housewives will prepare gingerbread cookies for the New Year 2020. The tradition of making fragrant pastries for the holidays came to Russia from Europe. Gingerbread cookies are increasingly becoming a real decoration of the festive table. Often they are used as Christmas tree decorations. The main feature of this baking is its incredible aroma. Cinnamon, cloves and other spices are definitely added to it. The cooking process is simple, even a novice hostess can handle it.
Gingerbread cookies with honey
To knead the dough from which holiday baking will be baked, the following ingredients should be prepared:
- 650 g of flour;
- a glass of sugar;
- 2 eggs;
- 200 g butter;
- 4 tbsp. tablespoons of honey;
- a teaspoon of ground ginger;
- 2 packs of baking powder;
- a teaspoon of cinnamon;
- a pinch of chopped cloves;
- a tablespoon of cocoa.
Pour sugar into softened butter, then beat with a mixer. Mass is sure to increase in volume. Sugar grains should not be felt. After alternately add eggs and honey. Mix the mixture well with a spatula after each added product, although you can use a mixer, but turn it on at a low speed.
Important! Honey must be liquid. If the bee product is already sugared, melt it first.
Add the remaining dry ingredients to the sifted flour. Pour dry food over the honey-honey mixture. Knead the dough with a spatula or spoon. Then let it stand for a couple of hours in the refrigerator, but first wrap it in cling film.
Roll out the dough with a sufficiently thin layer (5 mm), and then cut out the desired figures. They need to be baked at a temperature of 170-180 degrees for 10-15 minutes. Do not dry gingerbreads very much. They must remain soft. Let them cool completely, and then proceed to decorate. At this stage, you can immerse yourself in creativity. Christmas gingerbread cookies without eggs
Cookies prepared according to a simple recipe can be served on a table, presented to friends, relatives as a gift or hung on a Christmas tree. Minimum products required:
- 300 g whole grain flour;
- 3 tablespoons of sugar;
- 2 tsp baking powder;
- 140 g of honey.
If there is no whole-grain flour, ordinary flour will do. You can experiment a little and take rye flour. Be sure to add spicy spices:
- cinnamon
- cardamom;
- cloves and others
All spices must be taken in a ground form. Each spice will need a quarter teaspoon, but the recipe can be adjusted to your taste.
The cooking process consists of several stages:
1. Add sugar and honey to the melted butter. Stir to dissolve the sugar.
2. While the mixture cools, sift the flour. Add spices and baking powder to it. If there is no baking powder at home, replace it with 0.5 teaspoon of soda.
3. Combine the liquid and dry parts when the oil has cooled. The dough will turn out quite soft, although it should not stick to your hands.
4. Place it in the refrigerator for a couple of hours, after covering it with foil.
5. Roll out the dough about 0.5 cm thick. Cut the figures. The real decoration of the festive table for the New Year 2020 will be gingerbread cookies in the form of rats or mice. The mistress of the year will be glad of such a treat.
6.Put in the oven for 10-15 minutes. The baking temperature is 180 degrees.
Advice! If you want to use gingerbread cookies as Christmas tree decorations, make holes in the cocktail tube before baking. Then through them it will be possible to stretch a thin satin ribbon or a thick thread.
When the baking has cooled, garnish with icing. It will take only 100 g of powdered sugar and 2 tablespoons of lemon juice. If you add food coloring, glaze can be prepared in any color - green, red, blue. This will help to make a real culinary masterpiece that will be both beautiful and delicious.
Honey gingerbread with lemon zest
Before sweet and aromatic treats, in which a combination of honey and cinnamon shade lemon notes, no one can resist, but it is prepared easily and simply. For gingerbread cookies you will need available products:
- 200 g of honey (necessarily liquid);
- 400 g flour (you can take any);
- 100 g of granulated sugar (white or brown is suitable);
- 3 eggs;
- 1 teaspoon of soda;
- a pack of butter;
- a pinch of salt;
- half a lemon;
- 2 teaspoons ground cinnamon (you can take one stick and grind in a coffee grinder);
- ground cloves (to taste).
Melt the butter in a water bath. While the butter is heating, rub the zest of the lemon.
Add honey to the oil and mix. Separate the whites from the yolks and beat in a lush foam. To make them beat well, use eggs from the refrigerator. Rub yolks with sugar. Separately, beat eggs and butter with honey in one bowl. Add the zest.
Next, knead a tight dough. To do this, add soda and spices to the liquid part, and then gradually pour the flour. Instead of cloves, you can use ginger or other spices. Send the prepared dough to the refrigerator for a while, but first wrap it in plastic so that it does not dry out on top.
After 2-3 hours, roll out the dough and cut out gingerbread cookies of various shapes. After bake at 180 degrees for about a quarter of an hour.
Advice! If there are no cookie cutters, stencils can be made of thick cardboard, and then cut the desired figures with a knife.
When the gingerbread cookies have cooled, decorate them with chocolate (pre-melt in a water bath) or with icing made from one protein and 100 g of powdered sugar. Various patterns can be made with a pastry syringe. If not, use a tight bag. Put the icing in it, and then cut the corner of the bag. Next, gently squeeze the chocolate or cream onto the pastries.
Custard Chocolate Gingerbread Cookies
If you want to please the household and guests for the New Year of 2020 Rats with a delicious treat, make chocolate gingerbread cookies. To bring your plan to life, it is worth preparing the following set of products:
- 625 g of flour;
- 250 g of sugar;
- a glass of milk;
- 50 g of cocoa powder;
- a bag of vanillin;
- one egg;
- one yolk;
- 15 g of baking powder;
- a pinch of salt;
- 50 ml of vegetable oil.
For glaze you will need:
- 1 protein;
- 100 g of powdered sugar;
- 2 tsp cocoa.
Instead of chocolate glaze, you can use white (without cocoa) or color (with dyes).
Aromatic pastries are prepared like this:
1. First you need to make a custard batter. Boil the milk. Add flour and salt to it. Shuffle. Lumps are unacceptable. After 5 minutes, pour in the vegetable oil. When the mixture has cooled completely, add the yolk and egg. Beat with a mixer. Set aside protein for glaze.
2. Knead the main dough. Sieve the remaining flour, cocoa and baking powder into a large container. Add spices if desired. Pour in the liquid part and knead the dough. It will turn out a little sticky. Cover with foil so that it does not weather, and let it rest for 20-30 minutes.
3. Roll the dough in a thin layer and cut out the desired shapes.
4. Bake for 10-15 minutes, preheating the oven to 180 degrees.
While the gingerbread cookies are cooling, prepare the icing. Beat the protein with powder and cocoa with a mixer.Decorate the pastries and serve to the festive table. If desired, you can use colored sprinkles.
